Ramp Casserole

1 lb. pork sausage (suggested: sweet Italian) well drained
4 eggs
2 cups milk
10 potatoes (or an equivalent amount of fingerling potatoes)
approx. 15 ramps
2 cups of Cheedar Cheese, grated
 
In skillet fry sausage
 
In mixing bowl combine eggs and milk.  I used my whisk to mix.
 
Slice potatoes.
 
In 9 x 12 baking dish, layer potatoes, sausage and sliced ramps.  Pour blended eggs over layers.
Top with grated cheese.  Bake at 350 degrees until potatoes are tender, about 60 minutes.
